More Food for Chemotherapy

This was my supper tonight. The original recipe came from Rachel Ray's 30 Minute Meals on Food Network. I modified it to fit what I can tolerate.

Jicama and Carrot Slaw

1 cup jicama julienned
1 cup carrots julienned

Dressing

2 Tbsp orange marmelade
4 Tbsp white rice wine vinegar
2 Tsp dried parsley
Drizzled vegetable oil

Wisk all ingredients of dressing together. Pour over veggies. Toss well.
